SICILIAN CHICK PEA SALAD WITH RAISINS

A GREAT summer salad....

makes 4 servings

3 cups cooked organic chick peas, drained and rinsed
2 tablespoons raisins
2 tablespoons lightly toasted pine nuts (or slivered almonds)
1/4 cup finely sliced organic green onions or chopped red onions
1/4 cup chopped organic celery
2 tablespoons chopped organic parseley

2 tablespoons lemon juice (fresh organic lemon NOT bottled)
2 tablespoons organic apple cider vinegar
4 tablespoons olive oil
1/2 teaspoon finely grated lemon zest
Salt
1/8 teaspoon freshly ground black pepper

Organic red leaf lettuce
12 fresh organic basil leaves, cut into thin chiffonade

In a large mixing bowl combine chickpeas, raisins, pine nuts, onions, celery, and parseley, and stir gently to combine with a spoon.

In another bowl, combine lemon juice, vinegar, olive oil, lemon zest, salt, and black pepper. Pour over bean mixture and stir.
Serve over lettuce and garnish with basil.
