Spinach Quiche

1 (10 ounce) package frozen chopped spinach
2 cups organic cottage cheese
3 large organic eggs
1/4 cup flour (rice, bean or any type of flour works great!)
1 cup shredded mozzarella cheese (or any cheese will do)

While the spinach is thawing, in a large bowl mix up every thing else but the shredded cheese.

Then mix in the thawed spinach and shredded cheese.
Scoop mixture into 9" pie plate (with our without pie crust) and spread around evenly with a spatula.

Bake for 45 mins to an hour or until fork in the center comes out clean. It should be slightly browned on top.

NOTE: If you are using a pie crust I recommend covering the edges with foil until the last 15 mins or so of baking.
