Here is one to add for fish (even those in your families that hate fish, will eat this, I guarantee it!!) I never measure things when I cook so I will try to estimate: Buy some flounder or fluke (thin, white fish) Mix in bowl: imitation crabmeat or sea legs or whatever they call it in your supermarket, 1-2 packages mustard , a squirt or two mayonnaise, 2-3 Tb Progresso Italian bread crumbs, 1/4 to 1/3 cup green pepper, diced, 1/2 of one onion, 1/2 of a large one celery, 2-3 stalks Place fish on a flat tray (cookie sheet) and then 'pile' the stuffing on top of each fish completely. Bake in oven, 350 degrees, for 15-20 min. I then place under the broiler for 5-8 mins to make it 'crisp'. Simple, easy and quick.
